The average restaurant nacho platter has enough calories on it for an entire day. The next time you want to hit up your favorite Mexican joint stay home and make my easy “Fit Girl Nachos” (don’t worry about the name – guys love them, too)! This recipe has a much lower calorie content, much less bad fat, and plenty of fiber! You will keep your wallet fat and you waist skinny by avoiding the pitfalls of this restaurant calorie bomb…
– 1 Ezekiel sprouted grain tortilla
– .25 C of Fat Free Refried bean
– .25 C of vegetarian taco meat (like “Yves Meatless Ground” – Mexican flavor)
– .25 C of Low fat shredded Mexican blend cheese
– 1 tbs of Greek yogurt
– lime juice
– chili powder
– sea salt
– cooking spray
- Preheat oven to 375 degrees & cover a cookie sheet with foil
- Use a pizza wheel to slice tortilla into chip size pieces
- Brush the tortilla with a little lime juice
- Spray tortilla with Pam (or other non-stick cooking spray)
- Sprinkle on chili powder and salt to taste
- Bake for 10 minutes – flipping halfway through
- Spread beans, taco “meat”, salsa and cheese over top of the chips
- Bake for 5 minutes
- Top with Greek yogurt instead of sour cream

- I used Ezekiel sprouted grain tortillas because they are minimally processed and higher in protein and fiber then traditional tortillas.
- I chose meatless taco meat because you do not need to cook it and you avoid the higher saturated fat content of beef.
- Beans are very filling because of their high fiber content and they are also very versatile. I strongly encourage you to use them frequently in your cooking.
- Not every food product labeled “lowfat” is a good choice. However lowfat dairy retains the protein and calcium of traditional dairy while lowering the caloric density of the food itself.
- The chili powder, lime, and salsas kick up the flavor. You are less likely to “miss” the greasy deep fried chips if you have added extra elements of true flavor!
